Recently my local fruit and veg shop was selling trays of 22 mangoes for $10. Bargain! We LOVE mangos in our house and I couldn't pass them by, even though I could see that it wouldn't be long before they would 'turn'. There's a limit to how many we can eat in a short space of time. I thought about freezing the extras, and then thought of a fun way to freeze them. Blend them into smoothies and freeze them as ice blocks. Brilliant!
Here's what I did:
- Cut and scoop out the flesh of 4 Mangos and place in a blender jug.
- Add 1 teaspoon vanilla paste or extract.
- Blend it all up until smooth and poor it into your ice block molds. Pop them in the freezer, wait a few hours and there you have it- a perfect summers day treat. The kids love them!
